Cocotine Frozen Egg Yolks
When separated from the whites, pasteurised egg yolks can be used to bind your sauces but also to emulsify fats. Each 1kg carton contains approximately 66 egg yolks.
Ingredients: EGG yolk, sugar 10%.

Directions for use
Defrost the pack individually during 12 to 24 hours (at 0/+4°C) before using. Shake before using. To be used in egg yolk based recipes: creams, mayonnaise, quiche, baking etc. Equivalent to 66 egg yolk per kg.
Storage instructions
Before opening, to be kept at -12°C. After opening, consume within 24 hours after thawing. Do not refreeze after thawing.
